POTATO GNOCCHI WITH RADICCHIO AND SPECK

Ingredients

For 2/3 people
  • 500g of Potato Gnocchi
  • 2 legs of late-growing Trevisano radicchio
  • 4 thin slices of speck
  • 2 tablespoons of olive oil
  • 2 tablespoons of Parmigiano Reggiano cheese
  • Salt and pepper

Preparation

Heat the olive oil in a pan and brown the radicchio quickly, at this point add the already-cut speck and immediately take off the heat.

Boil the gnocchi and place it on the radicchio and speck, putting it back on the heat and sprinkling with grated Parmigiano cheese, pepper and then serving immediately.
