Potato stories
The ingredient that makes all the difference
SOIL, SOIL!
Its story is an adventurous one. It is the absolute protagonist in traditional recipes and gourmet cuisine, with its nutritional properties and its unmistakable taste so rich and, at the same time, simply natural
The precious tuber arrived in Europe from the New World during the Renaissance and became one of the staples of peasant nutrition because of its high energy value and its goodness.
CAREFREE TASTE
Potatoes are naturally rich in starch, potassium, phosphorus and vitamins, but not everyone knows that they count three times fewer calories than pasta It’s a perfect equation for combining the pleasures of eating with those of being fit.
SIMPLY POTATOES
Patamore uses fresh potatoes, peeled and processed just moments before kneading It knows no by-products such as starch, flakes or semolina to keep the nutritional value intact. Tradition comes first. Tradition first of all
THE PRODUCTION
STAGES
During the production process we perform a complete transformation process of the potatoes:
1. WASHING AND SELECTING POTATOES
Every day we wash and select over 10 tons of potatoes that arrive directly from the fields, still covered with soil.
2. COOKING AND MASHING
After washing, the potatoes are steam cooked with their skins to preserve all their nutritional and organoleptic properties; after that, they are peeled and mashed to obtain fresh mashed.
3. KNEADING AND EXTRUSION
The fresh potato puree is kneaded with 100% natural ingredients. Afterward, the dough is extruded and each gnocco is formed according to the shape we want to obtain.
4. PACKAGING
The already formed gnocchi are packaged in a protective atmosphere to ensure the stability of the quality and organoleptic values of the finished product.
5. PASTEURIZATION
Each bag of Patamore gnocchi undergoes a pasteurization process to avoid the use of preservatives.
6. COOLING AND STORAGE
Once pasteurized, the gnocchi are cooled and placed in our warehouses, waiting to be shipped to your trusted supermarket.
